Spooky Eye Ball Jelly

  • Setting time: 3 hours
  • Serves 4


  • 1x 135g pack Hartley's Raspberry Jelly Cubes
  • 425g tinned stoned lychees, drained
  • 12 blueberries
  • 1 passion fruit, optional

What you'll need

  • 4 serving dishes, jam jars work well


  1. Make up jelly as directed on pack and allow to cool.
  2. Push a blueberry into the centre of each lychee, this creates the eyeball.
  3. Cut the passion fruit in half and remove the fruit.
  4. Place two lychees and a little passion fruit in each serving dish and half fill with jelly.
  5. Put in the fridge to set.
  6. Add the remaining fruit and top up with the rest of the jelly.
  7. Put in the fridge to set.

  • 50ml Chase Marmalade Vodka
  • 25ml lime juice
  • 25ml sugar syrup
  • 1/4 teaspoon squid ink - or black food dye
  • Crushed ice


  1. Add all ingredients to a tall glass and swizzle.
  2. Garnish with dead mint and grapefruit.
