Ingredients:

Turkey Lollipops

  • 1 pack of minced turkey
  • 100g Bread crumbs
  • 75g Arla Lactofree® Spreadable
  • 1 small onion chopped and diced
  • ½ teaspoon Cayenne pepper
  • 1 teaspoon Cumin
  • 1 clove of Garlic chopped and diced
  • 2 teaspoons of tomato ketchup
  • Handful of finely chopped parsley leaves
  • Salt and pepper to taste
  • Long round lollipop sticks or wooden kebab sticks

Method:

  1. Preheat oven to 200 degrees
  2. In a bowl combine the turkey mince, Arla Lactofree® Spreadable, onions and garlic, herbs and spices, salt and pepper, ketchup and breadcrumbs until evenly combined using your hands
  3. Make small patty balls with your hands out of the meat mixture and place on a baking tray lined with greaseproof paper, leaving enough space for the lollipop sticks to be added
  4. Lightly insert the lollipop sticks into each patty ball
  5. Place baking tray in the oven and cook for 25 minute turning the lollipops half way through
  6. Once slightly cooked tie each stick with a red ribbon for decoration and serve immediately whilst still warm serve with cranberry jam for dipping*

*The cranberry jam should be made in advance by adding a thin layer of water - just enough to cover the bottom of the pan and then adding 200 grams cranberries with200 grams sugar, simmer on a low heat until the sugar had dissolved and the cranberries are glossy, be sure to keep stirring so all the sugar gets covered in water. Boil for a further 6 minutes until setting stage is reached. Pour the warm mixture into a sterilised jar and store until ready to use.
